sunday shenanigans


I've had this cold since friday night, it made Halloween, pretty miserable. I didn't want to give out candy, or do those last minute things I always do to make the front of the house look extra awesome. Added to all of that was the fact that we only had like 10 trick-or-treaters. So we have a TON of extra candy. I bought a Darth Vader pinata for the Dr's bday. I guess it can go in that. 

As sick as I am, I did actually feel like picking up my knitting needles. Which was great, and I've at least got a start on dyeing yarn. But I am wiped and so for dinner it's gonna be sloppy joe's and a new recipe Cheesy Potatoes. 

I have this insane hatred of tater tots. I'm not sure if it's the extra saltyness, the texture, the squishy insides... something about them just doesn't sit right with me, so I avoid them like the plague. Sadly, I didn't really want to put any effort into it, and i didn't want to order pizza cause it's Tom's go to food when I'm sick. We have had it for like three nights in a row (barf)

My friend Erika introduced me to her jazzed up sloppy joe recipe that I honestly am so in love with. I'm not a real sloppy joe kind of gal, but she brought these over for lunch one day and I ate 4 of them. All you need to do is brown the ground beef, (do 2lbs instead of 1lb) the normal manwich mix, and about 1/4 cup of brown sugar. Even cold, this stuff is the bees knees. I am glad to make this to have left overs cause it's even better the second day and it's epically delicious. this cheesy potato recipe is supposed to be similar to cracker barrels. i usually assume that if it has a whole stick of butter in it, i'm going to enjoy it A LOT. 

2lb frozen hashbrowns
1lb velveeta
1 can cream of chicken
1 can cream of potato
8 oz sour cream
1 stick of butter

In a sauce pan mix together all the ingredients except the hashbrowns. Stir until cheese is melted. Stir in the hashbrowns. Pour into greased 9x13 and bake at 425 for 30-40 minutes or until golden brown and bubbly.

i can vouch for it, it's pretty flipping delicious. A great, super easy dinner so I can go back to knitting in a timely manner.
